Saxum Vineyards, nestled in the Willow Creek District of Paso Robles, is dedicated to crafting exquisite Grenache, Syrah, and Mataro blends. Their approach is rooted in minimal intervention, allowing the unique terroir—rocky, calcareous soil, steep slopes, and maritime influences—to shine through. With a sustainable farming ethos and minimal irrigation needs, they let nature guide the process. Producing approximately 8,000 cases annually across a range of cuvees, including Broken Stones and Paderewski Vineyard, Saxum prioritizes authentic expressions of time and place in every bottle. What a wonderful discovery. Read about their white wines and just put the name into our navigation and trusted it has we meandered the country roads. It was 11:30am when we arrived and we were seated in a wonderful outdoor setting. The tasting flight resulted in the purchase of nine bottles plus a bottle of estate olive oil. This place is definitely on our return visit list for Paso Robles.

It was my first time in paso and our third wheel driver recommended this place since my boyfriend and I are red cab wine 🍷 people! And the minute we walked in it was just a heart warming welcomed by the staff and the owner herself. Didn't have reservations and they had no problem sat us down and no longer than 3 minutes we had our wine sampling our wine wasn't done when we had the next one coming and any questions we had we were able to get an answer too. I would definitely recommend this place and speaking for a red cab person but their Pinot Gris is AMAZING!! Hope they get out to stores because its sooo good...that it has me thinking of changing my wine up! Thank you still waters for making our trip to the wineries in Paso so pleasant 😊
