Escalar Wines, a family-owned winery, crafts Spanish varietals in limited quantities, ensuring meticulous attention to detail. Owner and Winemaker Eric Symonds draws inspiration from his Spanish heritage, with roots in Asturias, a region known for Tempranillo grapes. Producing under 500 cases annually allows Eric to dedicate himself to perfecting his craft.

Eric's winemaking journey began unexpectedly when a local vineyard sought his expertise. In exchange, he received a ton of Tempranillo and Tannat grapes. This marked the inception of his venture into winemaking.

Eric's travels through Spain and Uruguay ignited a passion for Tempranillo and Tannat. While Tannat isn't traditionally Spanish, its bold flavors captivated him. He envisioned it as Paso's equivalent of Cabernet. This affinity inspired the creation of the flagship 'Piel Del Toro,' a distinctive Tannat blend, embodying the strength and richness reminiscent of a bull's skin—a nod to Spain's iconic Osborne Bull. Another highlight is the handpicked Tannat Rosé, a collaborative effort with his son Wyatt, symbolizing perseverance and ascent—Escalar!

I had an amazing time at Escalar Winery. Eric and Michelle, the owners, were incredibly friendly, sharing their passion for wine and global winemaking experiences. The Tanat impressed me with its perfect balance, smoothness, and just the right acidity—I had to buy some. The Tanat Rosé was equally delightful, though unfortunately sold out. We seized their Christmas special on Tempranillo, and while I haven't tried it yet, I'm confident it'll be as delightful as the other wines. If you're in Templeton, Escalar is a must-visit—highly recommended!

Eric and Michelle were gracious hosts. My wife and I really enjoyed hearing Eric's journey as a winemaker. He is very passionate at what he does and it is evident in his wines. We loved the Albariño and also took home a case of the Piel Del Toro. We look forward to visiting them again on another trip.

Eric and Michelle were great hosts at a night we spent at their farm. Their wines are exceptionally good, took several bottles home! Will definitely come back when we’re around…

Eric and Michelle were gracious hosts while we camped on their property under Harvest Hosts. Their wine is exceptional and loved every drop! I recommend their wines!

Wonderful wines by Eric. He and his wife Michelle are gracious hosts ( Michelle makes a lovely cheese plate with crackers, chocolate, et al!). My friend and I visited yesterday and we were both so impressed. If you like a VERY small , personal venue (their lovely home’s expansive hilltop backyard) and want to talk wine with a very knowledgeable, talented and down-to-earth winemaker you should definitely visit Escalar!
