Caelesta Winery's sustainable 200-acre estate in Templeton Gap AVA features meticulously tended vineyards, with 80 acres dedicated to wildlife and conservation. Their approach focuses on quality, with vineyards planted on hillside blocks that force competition among vines, leading to fewer clusters per plant and concentrated, high-quality grapes. The vineyard's Linne-Calodo soil complex contributes to their terroir.
Since 2015, they've added a truffle program with 2,200 oak trees inoculated with Perigord Black truffle spores. Truffles are harvested each winter and served at local restaurants and to wine club members.
The family's endeavor began with Brian Sr. and Denise's love for wine and a vision for sustainable farming. Younger Brian's interest in the Paso Robles region culminated in the establishment of Caelesta in 2015. Their commitment to preserving oak woodlands while designing the vineyard showcases their conservation principles. Brian Jr., with experience from renowned wineries, started the Caelesta label in 2017, culminating in the 2019 inaugural vintage. The Farrell family remains hands-on, crafting terroir-driven wines that promise an exceptional future.
